
Colomba Cake
Ingredients
This is a message of hope and strength that we will get this through this, stronger, better and more resolute than ever. In that spirit and of the Easter season, the upcoming Spring and hope, our recipe this month is an Italian Easter holiday favorite, the Colomba Cake which takes the form of a dove.
- 12 oz (350g) flour
- 3.5 oz (100g) butter
- 3 Large eggs
- 7.0 oz (200g) sugar
- 3/4 cup whole milk
- 1 Zest from one organic orange
- 0.88oz (25g) yeast
- 3.5oz (100g) white chocolate (chunks or whole)
- 3.5oz (100g) dark chocolate chips
- sugar pearls
Directions
Mix sugar and butter and whisk them together until they become smooth and creamy. Add 3 egg yokes, orange zest, milk, flour, and yeast and then knead the dough until it’s smooth. Roll the dark chocolate chips in a small amount of flour so they are lightly coated and then add them to the dough. (use a strainer to get rid of any excess flour on the chocolate chips before adding them to the dough mixture.) Knead all together gently. Whisk the 3 egg whites until they become firm, then add the whisked egg white to the mixture and mix very gently from the bottom upwards until the egg white is fully absorbed in the mixture. Pour the mixture into a 750g (26 oz) Easter-Dove shaped mold and bake it at 350 degrees Fahrenheit for one hour. When cooked, let cool, remove from mold, right side up. Melt the white chocolate in a double boiler. Spread it on top of the Dove. The final touch is to sprinkle pearl sugar (extra-large sugar nuggets used on pastries) on top. (As an option, add a handful of roasted almonds on top)
